3/4 cup of mashed sweet potatoes
3 cups flour
1 package yeast
1 tbsp cinnamon
3 tbsp light brown sugar
2/3 cup of warm water
Cinnamon sugar (for the bagel tops)
Cook and mash sweet potatoes and mix with flour, yeast, cinnamon, brown sugar and water. Knead the dough for 7-10 min on floured surface.
Let rest for 10 min. Boil a pot of water and add 3-4 bagels at a time, 45 sec on each side.
Preheat oven to 400 degrees. Place boiled bagels on a greased baking sheet sprinkled with corn meal. Brush tops with egg white and water mixture and sprinkle with cinnamon sugar.
Bake for 15-20 minutes
